Garbanzo Bean Pancake with Fruit Sauce
1 tbsp Chickpea Flour
1 tsp Carrot (finely grated)
1 tsp Red bell pepper (finely chopped)
1 tsp Onion (finely chopped)
¼ tsp Turmeric powder
¼ tsp Cumin seeds
1 tbsp Chopped Coriander Leaves
Salt According to taste
1 tbsp Fruit Sauce (your choice)
1 tbsp Ghee
In a mixing bowl add the chickpea flour and then slowly add the water.
Whisk until smooth and set aside.
In a frying pan, heat 1 tsp ghee.
Cook carrot, red bell pepper, onion, turmeric and cumin seeds for 5 mins.
Add the carrot mixture to the chickpea batter along with the chopped coriander and salt.
Heat a non stick frying pan over a medium-high heat.
When hot add a drizzle of the ghee.
Add a tablespoon of the batter to the pan and use the back of spoon to spread it.
Cook from both sides until slight brown color comes up.
Remove pancakes from the pan and pour a fruit sauce.
