- 2 cups Pumpkin
- 1 Onion (sliced)
- 1 clove Garlic
- 2 cups of water
- ½ tsp Black pepper
- 1 cup Vegetable broth
- Salt According to taste
- Cut the skin of the pumpkin and scrape the seeds.
- Cut the pumpkin into chunks.
- In a deep pan, add all the ingredients.
- Bring to a boil and then reduce heat and let simmer rapidly until pumpkin is tender.
- Remove from heat and blend until smooth.
- Season to taste with salt and pepper.
- Serve hot.
