Instructions:

1. Sauté the Base

  • Melt homemade butter in a pan on medium heat.

  • Add chopped spring onions and garlic. Sauté until soft and fragrant.

2. Cook the Asparagus

  • Add the trimmed asparagus to the pan. Cook for 3–4 minutes, stirring occasionally.

3. Simmer the Soup

  • Pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 10 minutes until asparagus becomes tender.

4. Blend & Finish

  • Allow the soup to cool slightly, then blend until smooth.

  • Return the soup to the pan, season with salt, black pepper, and lemon juice.

  • Heat for another 2 minutes and stir well.

5. Serve

  • Garnish with coriander leaves and serve hot.
