Asparagus Soup
Instructions:
1. Sauté the Base

Melt homemade butter in a pan on medium heat.

Add chopped spring onions and garlic. Sauté until soft and fragrant.
2. Cook the Asparagus

Add the trimmed asparagus to the pan. Cook for 3–4 minutes, stirring occasionally.
3. Simmer the Soup

Pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 10 minutes until asparagus becomes tender.
4. Blend & Finish

Allow the soup to cool slightly, then blend until smooth.

Return the soup to the pan, season with salt, black pepper, and lemon juice.

Heat for another 2 minutes and stir well.
5. Serve

Garnish with coriander leaves and serve hot.
